Food Friday: Low Carb Fluffy Vanilla Cupcakes
this recipe is a great one to keep on hand, as its a very simple and basic cupcake recipe that can be customized based on flavor and frosting preferences. this recipe makes about 15 fullsize cupcakes and each one nets at 2.2. carbs and 109 calories - so even those following a ketogenic or low calorie diet will find these as a great treat. here’s how to make them:

you will need:
one cup of unsweetened almond milk (could also use coconut milk)
one cup of coconut flour (i prefer raw and organic)
1 1/2 tablespoons of alcohol-free vanilla
3/4 cup erythritol or xylitol
one tablespoon of baking powder
1/2 teaspoon sea salt
seven medium cage free organic eggs
six tablespoons grassfed butter (i prefer Kerrygold)
1/2 tablespoon liquid stevia (plain or flavor of your choice, like dark chocolate)
cinnamon to taste

recipe:
preheat oven to 325 and line cupcake trays with liners
beat the eggs
add everything else and scoop into the trays, bake for 30 - 35 minutes until tops are golden and they pass the fork test
top with cinnamon and your favorite frosting (i recommend a mix of stevia, erythritol and cream cheese!). enjoy!
