Food Friday: Low Carb, Paleo Cinnamon Toast Crunch
this is by far one of the most delicious low carb things i’ve made to date. for those doing nay form of induction, i don’t recommend this, as its a bit high in calories (395 per serving) and carbs (10.6 net). but for those of you who want to stick to your lc lifestyle, and need a bit of an indulgence, please do yourself a favor and make this asap. the below recipe serves four and is best served with cold almond or coconut milk!

you’ll need:
one cup blanched almond flour (Bob’s Red Mill is best)
half cup finely milled flaxseeds (could use something else like chia as an alternative)
1/3 cup erythritol or xylitol
eight tablespoons of grassfed butter (Kerrygold is best), melted
1/8 cup sliced almonds or another finely sliced nut.
two tablespoons cinnamon

recipe:
preheat oven to 300 and line a small cookie sheet with parchment paper.
combine all ingredients in a processor until mix balls up
lay flat on cookie tray and cook for 30 - 45 minutes until mixture hardens.
remove from oven and sprinkle with more sweetener and cinnamon and let cool completely before removing
once cool, break up, store in air-tight container and enjoy!
